Description:

A brilliant mahogany color with iodine hues, the nose presents an elegant blend of primary and oxidative aromas reminiscent of raisins, dried fruit and figs, and dates, with notes of molasses, coffee, tobacco, dark chocolate, and licorice. On the palate, it is powerful and dense, almost syrupy, extremely sweet and enveloping, with an extraordinary aromatic complexity that echoes the notes perceived on the nose. The finish is endless, with a lingering return of notes of dried fruit and caramel.

Produced in the Montilla-Moriles region of Andalusia, at an altitude of 400-600 meters above sea level on predominantly calcareous soils, from Pedro Ximénez grapes left to dry in the sun until almost dehydrated, thus concentrating sugars and aromas (with a very low yield of approximately 60-70 quintals per hectare). After pressing the dried grapes with hydraulic presses similar to those used for olive processing and undergoing partial fermentation with indigenous yeasts, the wine is fortified and aged using the traditional criaderas y soleras system, which involves periodic racking from younger oak barrels to older ones, stacked one on top of the other starting from the top tier, known as the "solera." This ensures consistent quality and extraordinary complexity.
