Description:
Dark mahogany in color, it presents an intense and enveloping bouquet of raisins, dried figs, and dates, with notes of molasses, coffee, dark chocolate, and a hint of nutmeg. On the palate, it is extremely sweet and velvety, almost syrupy, with an extraordinary complexity that unfolds through notes of dried fruit, bitter cocoa, and licorice. The finish is infinitely long and persistent. Perfect as a meditation wine, it also pairs magnificently with intense dark chocolate desserts, pastries made with dried fruit and spices, or very mature blue cheeses. In Andalusia, it is traditionally enjoyed poured over vanilla or nougat ice cream. Its complexity is best expressed when served slightly chilled, around 14°C.
Williams & Humbert, founded in 1877, is one of the most prestigious bodegas in Jerez, thanks to the size of its underground cellars (the largest in Europe) and the creation of the legendary "Dry Sack" brandy, one of the noblest expressions of sweet Sherry. Produced exclusively from sun-dried Pedro Ximénez grapes, which are then vinified and fortified with wine alcohol, it matures according to the traditional solera system, with an estimated average age of 20 to 25 years. This system involves barrels arranged in overlapping rows (criaderas), from which only a portion of the wine from the lowest row (solera) is removed, which is then replaced with wine from the upper row, and so on, ensuring consistent quality and extraordinary complexity.
