Description:
A deep golden yellow in color with bright highlights, it offers a rich and complex bouquet of ripe mango and quince on the nose, with notes of acacia honey, candied orange peel, and a delicate touch of vanilla. On the palate, it is sweet and elegant, with a fresh acidity that perfectly balances the sweetness, lending structure and longevity. The finish is long and persistent, with a return of fruity and spicy notes. Perfect with fruit-based desserts like apple strudel or apricot tart, it pairs magnificently with traditional South Tyrolean doughnuts and zelten, a Christmas cake made with dried fruit. It is also excellent with medium-aged blue cheeses and foie gras. An interesting local pairing is with Alto Adige speck and Stelvio PDO cheese.
Cantina San Paolo, a Alto Adige cooperative founded in 1907, has introduced Petit Manseng, a grape variety typical of Southwestern France, to its vineyards at approximately 500 meters above sea level, where the marked temperature variations between day and night favor the development of aromas and the maintenance of acidity. L'Aurie (which means "golden" in Occitan) is produced from grapes harvested late, in late autumn, when they have reached optimal ripeness and a natural sugar concentration. Fermentation in the cellar is slow, temperature-controlled in steel tanks, and is arrested naturally by cooling, to preserve the perfect balance between sweetness and acidity. The wine then ages on the fine lees, acquiring a beautiful structure and great aromatic complexity.
