Description:
A deep ruby red with elegant garnet highlights, the nose offers aromas ranging from ripe red fruits—cherry, strawberry, and raspberry—to more evolved notes of underbrush and sweet spices, enriched with balsamic notes that lend depth and aromatic complexity. On the palate, it presents an elegant and refined structure, characterized by an almost velvety texture resulting from the lengthy malolactic fermentation. The tannins are well-integrated and silky, while the lively acidity maintains freshness and momentum, culminating in a long and harmonious finish. Ideal with roasted red meats, feathered game, medium-bodied aged cheeses, and pasta dishes with meat sauces.
Produced from vineyards over 10 years old, at their peak, located at 250 meters above sea level on glacial soils with calcareous and silicate compositions that enhance minerality and flavor. The Valle dei Laghi's microclimate, influenced by the Ora wind from Garda and the Pelèr wind from the Adamello-Brenta Dolomites, creates ideal conditions for this gentle and delicate grape variety. Vinification involves crushing and destemming, followed by alcoholic fermentation with indigenous yeasts in truncated cone-shaped oak vats, followed by malolactic fermentation in small French oak barrels for over 20 days. Aged for over 10 months in the same barrels, followed by a stint in stainless steel until bottling, completing a further period of bottle aging.
