Pale straw yellow in color with greenish highlights, it offers fresh and delicate aromas of white flowers, aromatic herbs, and white fruits with a light nutmeg note characteristic of Müller-Thurgau. On the palate, it is fresh, light, and drinkable, with lively acidity, a lean body, and a clean, aromatic finish. Its lightness and immediacy make it a perfect wine for young consumption. It pairs excellently as an aperitif, with light appetizers, salads, fresh cheeses, delicate fish dishes, and shellfish. Perfect with Trentino specialties such as asparagus, potato tortelli, and spring dishes.
Palai was Pojer and Sandri's first wine, produced in 1975 when two friends, Fiorentino Sandri and Mario Pojer, began their winemaking journey. This wine, made from Müller-Thurgau grapes, was a resounding success, demonstrating their winemaking prowess and the potential of the Faedo area for viticulture. The name Palai comes from the eponymous village, located at 700 meters above sea level, where the Müller-Thurgau vineyards are located. The winery uses screw caps, a primarily ecological choice to avoid cutting down cork trees, reflecting its commitment to sustainability. Vinification involves temperature-controlled fermentation in stainless steel, preserving the grape variety's characteristic aromatic freshness. Palai represents the winery's historical roots and continues to be a symbol of their production philosophy.
