Antique rose in color with coppery highlights, it features a fine and persistent perlage. The nose reveals a broad and complex aroma characterized by notes of cherry, morello cherry, and raspberry, almond paste, hazelnut, and hay. Toasted notes of coffee and cocoa open a creamy and consistent palate, savory and particularly long. The result is clean, fresh, and not complex, but rather very balanced and therefore elegant. Excellent as an aperitif, it pairs beautifully with savory baked goods and seafood pizza. Perfect with appetizers, delicate fish and vegetable-based first courses, seafood dishes, and fresh cheeses.
The Brut Rosé by Pojer & Sandri embodies the elegance of the classic Pinot Noir and Chardonnay blend, interpreted according to the Trentino philosophy. The winery, founded in 1975 by Mario Pojer (winemaker) and Fiorentino Sandri (winemaker), is a symbol of Trentino winemaking excellence, with over 26 hectares of certified organic vineyards on the hills of Faedo and the Cembra Valley. The winemaking process involves fermentation in small oak barrels, where the wines remain on their lees for six months, a period of maturation aided by the "hourglass" technique, a weekly rotation of all the barrels. During the spring following the harvest, the grapes undergo secondary fermentation in the bottle, with disgorgement after no less than 18-24 months on the lees. This elegant and refined classic method, long and full-bodied, expresses the perfect balance between the freshness of Chardonnay and the structure of Pinot Noir.
