Description:

A deep gold in color with amber highlights, the nose immediately reveals an elegant and complex blend of apricot, ripe peach, and acacia honey notes, combined with citrusy hints of saffron and sweet spices. On the palate, it is sweet and harmonious, with a vibrant freshness that lengthens the finish, lending it great balance and elegance. It pairs well with both shortcrust pastry and cream-based desserts (obviously extraordinary with traditional Tuscan cantucci biscuits) and more daring pairings, such as foie gras or medium-aged blue cheeses (sweet Gorgonzola, Roquefort). In Umbria, it is traditionally served with Torcolo di San Costanzo, a typical Perugian dessert made with dried fruit and candied fruit.

Produced since 1987 at the Castello della Sala estate in Umbria, the result of Piero Antinori's successful experiment to create a "noble rot" wine in an area not traditionally suited to this type of production, its distinctive feature lies in the use of an unusual blend combining international grape varieties (Sauvignon Blanc, Sémillon, Traminer, Riesling) with local Grechetto, creating a bridge between the tradition of the great French botrytized wines and the identity of the Umbrian terroir. The influence of Lake Corbara's microclimate— morning mists and dry, breezy afternoons —which favors the development of Botrytis cinerea , is fundamental to this wine, which represents one of the rare Italian examples of a wine from botrytized grapes produced consistently every year.

After gentle pressing, the must is left to ferment slowly in French oak barrels, where the wine then ages for approximately 6 months, followed by further refinement in the bottle.
