Description:
Bright straw yellow in color with golden highlights, it expresses a fresh and delicate bouquet of yellow flowers, green apple, pineapple, and white peach, mixed with notes of aromatic herbs and a mineral undertone. On the palate, it is fresh and balanced, with a pleasant savory flavor and a good structure supported by lively acidity. The finish lingers on fruity and floral notes. Perfect with vegetarian or fish appetizers, such as sea bass carpaccio and seafood salads, it pairs splendidly with traditional Umbrian first courses such as stringozzi with fresh tomato and basil or ravioli with sheep's milk ricotta, as well as egg tagliatelle with delicate sauces. It is also excellent with "luccio in porchetta," a traditional dish of Lake Trasimeno, and with fresh goat's cheeses.
Fiorfiore represents one of the most elegant expressions of Roccafiore's white wines: made with Grechetto grapes grown in the hilly vineyards surrounding Todi, it reflects the winery's production philosophy, focused on promoting the terroir and sustainability. Vinification takes place initially in stainless steel at a controlled temperature to preserve the varietal's freshness and aromas, then for at least 12 months in large Slavonian oak barrels. Malolactic fermentation is omitted and the wine ages for at least six months in bottle. The 2023 vintage stands out for its balance between freshness and structure and will be at its best three-quarters after harvest.
