Description:
Intense ruby red in color with garnet highlights, the nose offers a broad and complex bouquet of ripe red fruit, black cherry in alcohol, and plum, with notes of dark chocolate, sweet spices, and a delicate touch of vanilla. On the palate, it is rich and velvety, with a deep sweetness balanced by a fresh acidity that prevents cloying. The finish is long and persistent, with a return of notes of ripe fruit and spice.
Considered the father of Amarone, Recioto is among Italy's noblest passito wines, an elegant representative of the Valpolicella winemaking tradition, where the Adalia winery produces it using strictly traditional methods: the grapes are hand-picked, selecting the finest bunches. They are then placed in crates and dried for approximately four months in traditional drying rooms, ventilated spaces where the grapes lose up to 40% of their weight in water, concentrating their sugars and aromas. After drying, the grapes are gently pressed and the must ferments at a controlled temperature. Unlike Amarone, Recioto fermentation is stopped before all the sugars are converted to alcohol, thus preserving its natural sweetness. The wine is then aged for approximately 12 months in oak barrels, which enhance its complexity without overpowering the fruity notes typical of Recioto – whose name derives from "recia" (ear in Venetian dialect), the upper part of the bunch which, being more exposed to the sun, produces grapes richer in sugars and which was traditionally selected for the production of this wine.
