Description:
Hazy straw yellow with greenish highlights and a fine perlage. The aroma is fresh and immediate, with notes of white-fleshed fruit, citrus, and wildflowers, along with hints of yeast and bread crust. On the palate, the effervescence is delicate and well-integrated, with a taut and vibrant palate characterized by good minerality and a pleasant citrus note. The finish is clean and savory with a subtle hint of fresh fruit. Excellent with light Venetian appetizers such as creamed cod and sardines in saor. It pairs perfectly with spring risottos, especially those with peas and white Bassano asparagus. It also pairs excellent with fried freshwater fish and battered vegetables. Its freshness also makes it ideal as an aperitif accompanied by Venetian cicchetti.
Quota 101, a young winery in the Euganean Hills, produces this wine with a natural and territorial approach. The Garganega grapes, grown at 101 meters above sea level (hence the winery's name), are hand-picked from vineyards on volcanic-calcareous soil. Fermentation occurs spontaneously with indigenous yeasts in steel tanks, without temperature control. Bottled with a small addition of must from the same grape to initiate secondary fermentation in the bottle, the wine is not disgorged, maintaining a hazy appearance and authentic character. Gobbetta represents a return to Venetian winemaking traditions, when sparkling wines were the result of a natural process rather than technical manipulation.
