Description:

A deep straw yellow in color, it presents intense aromas on the nose, ranging from orange peel and aromatic herbs to spices and vanilla, deriving from the partial aging in wood. On the palate, citrus and golden apple emerge, all supported by a good alcohol content that brings a subtle sensation of sweetness, tempered by savory notes and a delicious minerality that supports its smoothness and tempers its power. The result is an intense and characterful wine. It pairs excellently as an aperitif and with seafood risotto, fish main courses, grilled white meats, and fresh and medium-aged cheeses. Perfect with Venetian specialties such as squid ink risotto, creamed cod, and traditional lagoon dishes.

Quota 101 produces this entirely organic wine, which began almost as a gamble and is now the wine that best represents the winery. Manzoni Bianco is not strictly a native grape, but has long been adopted by many Veneto wineries to the point of being considered a local wine. Its strength lies in the distinctive minerality that characterizes the varietal. The winemaking process involves fermentation taking place half in stainless steel and half in wood, creating a balance between freshness and aromatic complexity. This technique gives the wine a dual personality that makes it versatile and recognizable, expressing both the purity of the fruit and the complexity derived from contact with wood.
