Description:
A deep ruby red in color, the nose offers an elegant bouquet of ripe cherry and red fruits, enriched with delicate spicy notes and subtle hints of undergrowth. On the palate, it reveals a balanced structure, with elegant tannins and a pleasant freshness that supports a medium-full body. The finish is persistent, with a return of fruity notes accompanied by a light hint of spice. Perfect with traditional Venetian pasta dishes such as bigoli with ragù, it pairs beautifully with grilled red meats, roasts, and braised meats. It also pairs excellently with medium-aged cheeses typical of the area, such as Monte Veronese.
The Speri winery, founded in 1874 by the eponymous family, now in its seventh generation, represents one of the most important historic wineries in the Valpolicella Classica region. The 60 hectares of vineyards in the appellation's most suitable areas are managed according to organic farming principles, and the winemaking process follows the traditional Valpolicella method, with the grapes hand-picked, delicately destemmed, and crushed. Fermentation takes place in temperature-controlled stainless steel tanks for approximately 12 days, with frequent pumping over. This is followed by 12 months of aging in Slavonian oak barrels, which imparts elegance and complexity to the wine, preserving its expression of the terroir.
