Description:

As described on the label, it is pale straw yellow in color with greenish highlights. The nose presents fruity notes of pineapple, citron, and candied fruit. On the palate, it is crisp and supple, with lingering notes of bread crust, thanks to the secondary fermentation in the bottle, and a delicate effervescence. Pair with raw seafood, especially oysters, prosciutto, or medium-aged cheeses.

The name Colantonio recalls the ancestral production method, where the wine is bottled with its own yeasts which complete the fermentation in the bottle, creating a natural effervescence.
